What's a good holiday destination for my mother and I?

My mum and me want to go on a little holiday after a hard year of working and life, I'm in my 20's and she's in her 40's... she likes moaning and getting burnt in the sun and good food, I like culture, exploration and a bit of night life though nothing tacky... the one thing we both want is somewhere nice in the 4-5* region and in the sort of EU area though if you've got anything a little further away from our home in the UK that's ok... I'm looking for specific regions and hotels. Please help!
